Ah Happy Friday everyone! I felt it took a while to get back into the swing of things after a relaxing long weekend in Sarnia. I think Canada Day is one of my favourite holidays, everyone is in such a great mood, the sun is shining, and (in my case), there was a lot of food and drink consumed (more the food part).
Today I have a flavourful summer salsa recipe that you can pair with pretty much anything; fish, beef, chicken, gluten free corn chips…
This is my lazy version of a salsa as it takes very little time to prepare. I also really hate tomatoes so this one is sans tomatoes, but feel free to add in.
What you need:
Red onion
Red pepper
Yellow pepper
Sweet corn
Spring onion (optional)
Jalapeno
Cilantro
Lime
Salt and Pepper
What to do:
Finely chop all ingredients and add to a bowl. Squeeze one full lime over the mixture and add salt and pepper to taste.
Enjoy the weekend, I have a long trail run on Saturday morning and then hopefully spending the day at the beach!
